Ingredients:
For the Swicy Candied Lemon Jewels:
2 large lemons (preferably organic), thinly sliced and seeds removed
1 cup granulated sugar
¾ cup water
1 tsp red chili flakes (adjust to taste)
½ tsp Aleppo pepper or smoked paprika (optional for depth)
Pinch of salt
For the Whipped Feta Cloud:
6 oz feta cheese, crumbled
½ cup Greek yogurt or labneh
2 tbsp honey
1 tbsp lemon juice
2 tbsp olive oil
Freshly cracked black pepper (to taste)
Instructions:
1. Make the Swicy Candied Lemons:
In a saucepan, combine sugar, water, chili flakes, paprika, and a pinch of salt. Bring to a gentle simmer.
Add lemon slices and reduce heat to low. Let them simmer uncovered for 25–30 minutes, flipping occasionally, until translucent and slightly thickened.
Remove the slices and lay them flat on parchment to cool. Reserve the syrup — it’s liquid gold!
2. Prepare the Whipped Feta Cloud:
In a food processor, blend feta and Greek yogurt until smooth.
Add honey, lemon juice, and olive oil. Blend again until creamy and fluffy. Taste and adjust with black pepper or a touch more honey if desired.
Chill for 15 minutes for the best texture.
