Ingredients:
1 cup all-purpose flour
½ cup unsalted butter, softened
1/3 cup granulated sugar
1 large egg
1 tsp vanilla extract
1 tsp baking powder
Pinch of salt
½ cup powdered sugar (for dusting, optional)
Optional additions: chocolate chips, cinnamon, chopped nuts, or sprinkles
Instructions:
Prepare the Waffle Iron: Preheat your waffle iron according to the manufacturer's instructions. Lightly grease the plates with a non-stick spray or a small amount of melted butter to prevent the cookies from sticking.
Mix the Cookie Dough: In a medium bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the egg and vanilla extract, and continue mixing until fully incorporated.
Add Dry Ingredients: Sift together the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, mixing until you have a smooth dough. If you wish to incorporate chocolate chips, nuts, or other add-ins, fold them into the dough now.
Cook the Cookies: Take a tablespoon of dough and place it in the center of the preheated waffle iron. Close the lid and cook for about 2-4 minutes, depending on the size of your waffle iron and how crispy you want the cookies. You should see golden-brown edges when they are ready.
Cool and Serve: Carefully remove the waffle cookies from the waffle iron and place them on a wire rack to cool. Once cooled, dust with powdered sugar if desired.
