Add the sugar and lemon juice to the pot and stir to combine.
Reduce the heat to low and let the mixture simmer for about 45-60 minutes, stirring occasionally. The mixture should start to thicken and become jam-like.
To test if the jam is done, place a small amount on a plate and let it cool for a few minutes. If it thickens and doesn't run, it's ready. If it's still runny, continue cooking and testing every few minutes.
Once the jam is done, remove from heat and let it cool for a few minutes.
Transfer the jam to sterilized jars and let it cool completely before storing in the fridge
