1/4 cup chopped fresh cilantro
8-10 small tortillas (corn or flour, choose your favorite)
Instructions:
Heat the olive oil in a large skillet over medium-high heat.
Add the sliced onions and sauté for 2-3 minutes until they start to soften.
Stir in the sliced bell peppers, zucchini, and mushrooms. Cook for another 5-6 minutes or until the vegetables are slightly tender.
Add the minced garlic, chili powder, ground cumin, paprika, smoked paprika (if using), salt, and pepper to the skillet. Mix well to coat the vegetables evenly with the spices. Cook for an additional 2 minutes to allow the flavors to meld.
Squeeze the juice of one lime over the vegetables and give it a final stir.
Remove the skillet from heat and stir in the chopped cilantro.
Warm the tortillas either on the stovetop or in the microwave according to package instructions.
Serve the fajita mixture on the warm tortillas. You can add additional toppings such as guacamole, salsa, vegan sour cream, or shredded vegan cheese if desired.
