12 mini sweet peppers
8 oz goat cheese
1 tablespoon olive oil
Directions
Preheat your oven to 375°F (190°C).
Cut the mini sweet peppers in half lengthwise, and remove the seeds and membranes.
In a small bowl, mix the goat cheese with the olive oil until smooth and creamy.
Spoon the goat cheese mixture into each pepper half.
Place the stuffed peppers on a baking sheet and bake in the preheated oven for 15-20 minutes, or until the peppers are tender and the cheese is slightly golden.
Allow to cool for a few minutes before serving.
Variations & Tips
If you have adventurous eaters, consider adding a sprinkle of fresh herbs like thyme or rosemary to the goat cheese mixture for an extra burst of flavor.
