Instructions:
Prepare the Bitter Melon: Begin by slicing the bitter melon in half lengthwise. Use a spoon to scoop out the seeds and pith. Slice the melon into thin, half-moon shapes.
Salt the Melon: Sprinkle a little salt over the bitter melon slices and let it sit for about 10 minutes. This process helps reduce some of the bitterness. Afterward, rinse the bitter melon slices under cold water and set them aside.
