2 lbs boneless, skinless chicken thighs (or breasts for a lighter option)
1 cup frozen corn kernels
1 cup diced carrots
1 medium onion, finely chopped
3 cloves garlic, minced
2 cups heavy cream
1 cup chicken broth
1 ½ cups grated cheddar cheese
1 ½ cups crushed Ritz crackers (or similar buttery crackers)
4 tbsp unsalted butter, divided
1 tsp dried thyme
1 tsp dried rosemary
Salt and pepper to taste
2 tbsp fresh parsley, chopped (for garnish)
Instructions:

Prep the Chicken: Start by seasoning your chicken thighs or breasts with salt, pepper, thyme, and rosemary. In a large skillet, heat 2 tablespoons of butter over medium heat. Cook the chicken for about 6-8 minutes on each side, until golden and cooked through. Remove from the skillet and set aside to cool. Once cooled, shred the chicken into bite-sized pieces.

Cook the Vegetables: In the same skillet, add the remaining 2 tablespoons of butter. Add the chopped onion, carrots, and garlic, cooking for about 5 minutes until softened. Stir in the frozen corn and cook for another 2 minutes.
