Ingredients:
For the Cake:

1½ cups all-purpose flour

1½ tsp baking powder

¼ tsp salt

½ cup unsalted butter, softened

¾ cup granulated sugar

2 large eggs

1 tsp vanilla extract

½ cup whole milk

For the Mascarpone Filling:

1 cup mascarpone cheese (room temperature)

¾ cup heavy cream

⅓ cup powdered sugar

1 tsp vanilla bean paste or extract

For the Strawberry Layer:

1½ cups fresh strawberries, sliced

1 tbsp lemon juice

1 tbsp sugar (optional, for extra sweetness)

For Garnish (optional):

Whole strawberries

Mint leaves

Powdered sugar for dusting

Directions:
Bake the Cake:
Preheat your oven to 350°F (175°C). Grease and line two 8-inch round cake pans. In a bowl, whisk together flour, baking powder, and salt. In another bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla. Alternate adding the flour mixture and milk, beginning and ending with the dry ingredients. Divide the batter between pans and bake for 22–25 minutes or until a toothpick comes out clean. Cool completely.

Prepare the Mascarpone Cream:
In a mixing bowl, beat mascarpone until smooth. In a separate bowl, whip heavy cream with powdered sugar and vanilla until soft peaks form. Gently fold the whipped cream into the mascarpone until fully combined and fluffy.

Assemble the Cake:
Place one cake layer on a serving plate. Spread half of the mascarpone cream on top. Arrange sliced strawberries evenly. Add the second cake layer and top with remaining mascarpone cream. Decorate with whole strawberries and mint if desired.

Chill Before Serving:
For best results, refrigerate the cake for at least 1 hour before slicing. This helps the layers set and flavors to meld beautifully.
