For the strawberry syrup:
1 cup fresh strawberries, chopped
1/2 cup water
1/4 cup sugar
1 tbsp lemon juice
For the mascarpone filling:
1 cup heavy cream
8 oz mascarpone cheese, room temperature
1/3 cup powdered sugar
1 tsp vanilla extract
For assembly:
1 pack ladyfinger biscuits (savoiardi)
1 ยฝ cups fresh strawberries, sliced
Mint leaves or extra berries for garnish (optional)

1. Make the strawberry syrup:
In a small saucepan, combine chopped strawberries, water, sugar, and lemon juice. Simmer over medium heat for 8-10 minutes, or until the berries break down and the mixture thickens slightly. Let it cool, then strain to remove solids. Set aside.
2. Prepare the filling:
Whip the heavy cream until stiff peaks form. In another bowl, mix mascarpone, powdered sugar, and vanilla until smooth. Gently fold in the whipped cream until fully combined and airy.
3. Assemble the tiramisu:
Quickly dip each ladyfinger into the cooled strawberry syrupโdonโt soak too long or theyโll fall apart. Layer dipped ladyfingers in the bottom of a dish (8x8 works well). Spread half the mascarpone mixture over the ladyfingers. Add a layer of sliced strawberries.
Repeat with another layer of dipped ladyfingers, the remaining mascarpone mixture, and top with more strawberries.
4. Chill:
Cover and refrigerate for at least 4 hours, or preferably overnight, to let the flavors meld beautifully.
