Step-by-step panettone dough

  1. In a large bowl, sift the flour and make a well in the center.
  2. Add the yeast to the lukewarm milk and mix until dissolved. Let it sit for a few minutes until it starts to bubble.
  3. To the flour well, add the egg yolks, whole egg, sugar, salt, vanilla, lemon zest, and orange zest. Mix these ingredients together.
  4. Pour the dissolved yeast into the center of the flour mixture and start mixing everything together.
  5. Add the butter in small pieces and continue kneading until the dough is smooth and elastic. This can take about 15 to 20 minutes.
  6. If you're using candied fruit and raisins, add them to the dough and knead until evenly distributed.
  7. Cover the dough with a damp cloth and let it rest in a warm place for about 2 hours or until the dough has doubled in size.
