1. In a medium bowl, mix together the soy sauce, olive oil, natural sweetener, apple cider vinegar, minced garlic, grated ginger, black pepper, and water to make the marinade.
2. Place the chicken pieces in the marinade, ensuring they are well-coated. Cover the bowl and refrigerate for at least 30 minutes, but preferably 2 hours to allow the flavors to meld.
3. If using wooden skewers, soak them in water for about 30 minutes to prevent burning. Preheat your grill to medium-high heat.
4. Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece to ensure even cooking.
5. Grill the chicken skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
6. Sprinkle with sesame seeds and green onions before serving, if desired.
Variations & Tips
You can add your favorite low-carb vegetables to the skewers, such as mushrooms, cherry tomatoes, or bell peppers, to make the dish more colorful and nutritious. For a bit of heat, you might include a pinch of red pepper flakes in the marinade. If you don't have an outdoor grill, these skewers can be cooked on a stovetop grill pan or broiled in the oven. Lastly, for a tangy twist, try adding a teaspoon of lime juice to the marinade.
