Shrimp with Mauritian Spices

Instructions :
Heat the oil in a pan and fry the onion, garlic and ginger for 2 minutes.
Add the diced tomatoes and cook until very soft.
Add the tomato paste and curry and cook for 1 minute.
Add the coconut milk, sugar, salt and pepper. Let simmer for 10 minutes.
Add the shrimp and cook for another 5 to 7 minutes. Adjust the seasoning if necessary.
Serve hot with rice or vegetables.

Cooking time: 20 minutes
