Ingredients:
500g (1 lb) fresh button or cremini mushrooms, cleaned and trimmed
4 tbsp olive oil
2 tbsp red wine vinegar (or white wine vinegar)
2 garlic cloves, minced
1 tsp fresh thyme leaves (or ½ tsp dried thyme)
1 tsp whole black peppercorns or ½ tsp freshly ground black pepper
½ tsp salt
½ tsp sugar (optional, for balance)
1 small bay leaf (optional)
Zest of ½ lemon (optional, for brightness)
Directions:
Blanch the Mushrooms:
Bring a pot of lightly salted water to a boil. Add the mushrooms and simmer for 3–4 minutes until slightly tender. Drain and let them cool.
Prepare the Marinade:
In a bowl, whisk together the olive oil, vinegar, garlic, thyme, salt, sugar, and lemon zest if using. Add the pepper and bay leaf.
Combine and Marinate:
