Ingredients:
For the Dumplings:
200g ground pork
150g shrimp, peeled, deveined, and finely chopped
2 tablespoons soy sauce
1 tablespoon oyster sauce
1 teaspoon sesame oil
1 tablespoon rice vinegar
2 teaspoons minced ginger
2 garlic cloves, minced
1/4 cup finely chopped green onions
1/4 cup finely chopped water chestnuts (optional, for added crunch)
1 package of dumpling wrappers (about 30-40 wrappers)
Salt and pepper to taste
For the Dipping Sauce:
3 tablespoons soy sauce
1 tablespoon rice vinegar
1 teaspoon sugar
1/2 teaspoon chili oil (optional, for heat)
1 teaspoon sesame seeds (optional, for garnish)
Instructions:
Prepare the Filling:
In a large mixing bowl, combine the ground pork and chopped shrimp.
Add the soy sauce, oyster sauce, sesame oil, and rice vinegar, stirring until the meats are evenly coated.
Mix in the minced ginger, garlic, green onions, and water chestnuts (if using).
Season with salt and pepper to taste, and blend everything until it’s well combined.
Assemble the Dumplings:
Place a dumpling wrapper on a clean surface, and spoon about 1 teaspoon of the filling mixture into the center of the wrapper.
Moisten the edges of the wrapper with a bit of water, then fold the wrapper in half to create a half-moon shape. Pinch the edges together firmly to seal the dumpling.
For a pleated look, you can fold the edges into small pleats while pressing them together.
Cook the Dumplings:
Heat a large non-stick pan over medium-high heat and add a tablespoon of oil.
Place the dumplings in the pan and cook for 2-3 minutes, or until the bottoms are golden brown.
Add 1/4 cup of water to the pan and immediately cover to steam the dumplings for about 5 minutes, or until cooked through.
Carefully remove the lid and let the water evaporate, cooking the dumplings for an additional minute to crisp up the bottoms.
Prepare the Dipping Sauce:
In a small bowl, combine soy sauce, rice vinegar, sugar, and chili oil (if using).
Stir until the sugar dissolves and garnish with sesame seeds if desired.
Serve:
Serve the dumplings hot with the dipping sauce on the side.
Tips for Serving and Storing:
Serving: These dumplings are perfect as an appetizer or served alongside fried rice or stir-fried vegetables. You can also pair them with a light soup for a complete meal.
Storing: If you have leftover dumplings, you can store them in an airtight container in the refrigerator for up to 3 days. To reheat, you can either steam them or pan-fry them again for a crispy finish.
Freezing: Dumplings can be frozen before or after cooking. If freezing uncooked dumplings, arrange them on a baking sheet in a single layer and freeze for about an hour before transferring them to a sealed container or zip-top bag. Cook them straight from frozen, increasing the steaming time by a few minutes.
