1 lb ground turkey
2 medium sweet potatoes, peeled and diced
1 medium onion, chopped
2 cloves garlic, minced
1 bell pepper, diced
1 tablespoon olive oil
1 teaspoon ground cumin
1 teaspoon paprika
1/2 teaspoon chili powder (optional, for heat)
Salt and pepper to taste
Fresh cilantro, chopped (for garnish)
1/4 cup chicken broth (or water)
1 tablespoon lime juice (optional)
Instructions:

Heat the olive oil in a large skillet over medium heat. Add the ground turkey and cook, breaking it up with a wooden spoon, until browned and fully cooked (about 5-7 minutes). Season with salt, pepper, cumin, paprika, and chili powder.
Remove the cooked turkey from the skillet and set aside. In the same skillet, add the diced sweet potatoes. Cook for 5-7 minutes, stirring occasionally, until they begin to soften.
Add the chopped onion, garlic, and bell pepper to the skillet with the sweet potatoes. Stir to combine, cooking for another 3-4 minutes until the vegetables begin to soften and the onion turns translucent.
Pour in the chicken broth (or water) to help soften the sweet potatoes. Cover the skillet and cook for another 5-10 minutes, stirring occasionally, until the sweet potatoes are tender.
Return the cooked ground turkey to the skillet, mixing it well with the vegetables. Let everything cook together for an additional 2-3 minutes.
Once everything is heated through, add lime juice (optional) and adjust seasoning if necessary. Garnish with fresh cilantro.
