Ingredients:
1 tablespoon sesame oil
1 lb ground pork (or chicken, beef, or turkey)
1/2 cup shredded carrots
1/2 cup shredded cabbage (Napa or regular cabbage)
1/2 cup shiitake mushrooms, sliced (or any mushrooms of choice)
4 cloves garlic, minced
1-inch piece of ginger, grated
4 cups chicken broth (or vegetable broth)
2 tablespoons soy sauce (or tamari for gluten-free)
1 tablespoon rice vinegar
1/2 teaspoon five-spice powder (optional for extra flavor)
1/2 teaspoon crushed red pepper flakes (adjust to taste)
2 green onions, chopped (for garnish)
1 tablespoon toasted sesame seeds (optional)
2 boiled eggs (optional, for topping)
Instructions:
Cook the Pork: In a large pot, heat sesame oil over medium heat. Add the ground pork (or your choice of meat) and cook until browned, breaking it apart with a spoon as it cooks. Once browned, remove any excess fat from the pot.
Add Vegetables: To the same pot, add the shredded carrots, cabbage, and sliced mushrooms. Cook for 3-4 minutes until they begin to soften.
Add Aromatics: Stir in the garlic and ginger, and cook for another 2 minutes until fragrant.
Make the Broth: Pour in the chicken broth, soy sauce, rice vinegar, and five-spice powder (if using). Stir well to combine. Bring the soup to a boil, then lower the heat and let it simmer for about 10 minutes, allowing all the flavors to meld together.
Season and Simmer: Taste the soup and adjust the seasoning as needed. Add salt, pepper, or extra soy sauce if desired. If you like a little spice, add the crushed red pepper flakes at this point.
Serve: Ladle the soup into bowls, garnishing with chopped green onions, a sprinkle of toasted sesame seeds, and a soft-boiled egg if desired. Serve hot, and enjoy!
Tips for Serving and Storing:
Serving Tip: Serve this soup with a side of crispy wonton strips for an extra crunch, or pair it with steamed rice to make it a more filling meal.
Storing Tip: Store any leftover soup in an airtight container in the fridge for up to 3 days. You can also freeze the soup (without the boiled eggs) for up to 3 months. To reheat, simply warm over low heat on the stove until heated through.
