Ingredients:

4 boneless, skinless chicken breasts
1 cup cooked broccoli florets (finely chopped)
1 cup shredded sharp cheddar cheese
2 tablespoons cream cheese (softened)
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon salt
¼ teaspoon black pepper
1 cup breadcrumbs (for coating)
1 tablespoon olive oil (for greasing)
1 tablespoon butter (melted)
½ cup grated parmesan cheese (optional, for extra flavor)
Instructions:

Preheat your oven to 375°F (190°C) and grease a baking dish with olive oil.
Place the chicken breasts between two sheets of parchment paper or plastic wrap. Gently pound them with a meat mallet or rolling pin to an even thickness, about ½ inch.
In a medium bowl, combine the finely chopped broccoli, shredded cheddar cheese, softened cream cheese, garlic powder, onion powder, salt, and black pepper. Stir until well blended.
Spoon the broccoli and cheese mixture onto the center of each chicken breast, spreading it out evenly.
Roll each chicken breast tightly around the filling, securing the ends with toothpicks.
Dip each rollup into breadcrumbs to coat the chicken evenly, pressing gently so they stick.
Place the chicken rollups in the prepared baking dish. Brush the top with melted butter and sprinkle with grated parmesan cheese, if desired.
Bake for 30-35 minutes or until the chicken is fully cooked and the cheese filling is bubbly and golden.
Remove from the oven and let the rollups rest for a few minutes before serving.
