Ingredients:
For the Pesto-Crusted Salmon:
4 salmon fillets (skin-on or skinless, based on preference)
1/4 cup prepared pesto (store-bought or homemade)
1/2 cup breadcrumbs (for extra crunch)
1 tbsp olive oil
Salt and pepper, to taste
Lemon wedges for serving
For the Steak with Basil Cream Sauce:
2 boneless ribeye or filet mignon steaks
2 tbsp olive oil
Salt and pepper, to taste
1/2 cup heavy cream
1/4 cup fresh basil leaves, finely chopped
1 tbsp grated Parmesan cheese
1 tbsp garlic, minced
1 tsp lemon zest
Instructions:
Preheat the Oven and Prepare the Salmon: Preheat your oven to 375°F (190°C). Pat the salmon fillets dry with paper towels and season with salt and pepper. Spread a thin layer of pesto on top of each fillet, ensuring it’s evenly coated. Then, sprinkle breadcrumbs over the pesto to form a crunchy crust.
Cook the Salmon: Heat olive oil in an oven-safe skillet over medium-high heat. Once hot, place the salmon fillets skin-side down (if using skin-on) and sear for about 2-3 minutes until the crust is golden. Transfer the skillet to the oven and bake for 12-15 minutes or until the salmon is cooked through but still tender.
Prepare the Steak: While the salmon is baking, heat olive oil in a separate skillet over medium-high heat. Season the steaks with salt and pepper, then sear them for about 4-5 minutes on each side for medium-rare, or longer if you prefer them more done. Remove the steaks from the pan and let them rest while you prepare the basil cream sauce.
Make the Basil Cream Sauce: In the same skillet used for the steaks, lower the heat to medium. Add minced garlic and sauté until fragrant, about 30 seconds. Pour in the heavy cream and bring to a simmer. Stir in the chopped basil, Parmesan cheese, and lemon zest. Let the sauce simmer for 3-4 minutes until it thickens slightly.
Serve: Plate the steaks and top them generously with the basil cream sauce. Once the salmon is cooked, serve it alongside the steaks with lemon wedges for a burst of fresh flavor. Serve the meal with your favorite vegetables or a fresh salad.
