Ingredients:
1 lb ground beef (or ground turkey for a leaner option)
1 medium onion, diced
1 bell pepper, chopped
2 cloves garlic, minced
1 can (14 oz) diced tomatoes (no added sugar)
1 can (4 oz) diced green chilies
1 can (8 oz) tomato sauce
3 cups beef broth (or chicken broth)
1 tbsp taco seasoning (make sure it's keto-friendly)
1 tsp cumin
1 tsp paprika
Salt and pepper to taste
1 cup heavy cream (optional for extra creaminess)
1 tbsp olive oil or butter for cooking
Instructions:
In a large pot or Dutch oven, heat olive oil or butter over medium heat. Add the diced onion and bell pepper, cooking until softened, about 4-5 minutes.
Add minced garlic to the pot and cook for another 1 minute until fragrant.
Add ground beef (or turkey) to the pot, breaking it apart as it cooks. Cook until browned, about 6-7 minutes. Drain any excess fat if necessary.
Stir in the taco seasoning, cumin, paprika, salt, and pepper, mixing well to coat the meat.
Add the diced tomatoes, green chilies, tomato sauce, and beef broth to the pot. Stir to combine.
Bring the soup to a simmer and cook for 15-20 minutes, allowing the flavors to meld together.
For a creamier texture, stir in heavy cream and let it heat through.
Taste the soup and adjust seasoning as needed.
Serve hot, topped with your favorite keto-friendly garnishes like shredded cheese, avocado slices, or sour cream.
