Ingredients:
10 cups of popped popcorn (about 1/2 cup of kernels)
1 cup unsalted butter
1 cup brown sugar, packed
1/4 cup honey
1/2 teaspoon salt (or to taste)
1/2 teaspoon vanilla extract
1/2 teaspoon baking soda
1 cup roasted peanuts (salted or unsalted, depending on preference)
Instructions:
Prepare the popcorn: Begin by popping your popcorn. You can use an air-popper or stovetop method, making sure to remove any unpopped kernels. Place the popped popcorn in a large bowl, ensuring it's ready for the caramel coating.
Make the caramel sauce: In a saucepan over medium heat, melt the butter. Once melted, stir in the brown sugar, honey, and salt. Bring the mixture to a gentle simmer, stirring constantly, and let it cook for about 5 minutes, until it thickens slightly.
Add vanilla and baking soda: Once the caramel has simmered, remove it from the heat. Stir in the vanilla extract and baking soda. The baking soda will cause the mixture to bubble up, which helps make the caramel lighter and crunchier when it cools.
Combine the caramel and popcorn: Pour the hot caramel sauce over the popped popcorn in the large bowl. Gently toss the popcorn to coat it evenly. Make sure each kernel gets a nice coating of the caramel mixture.
Bake the caramel corn: Preheat your oven to 250°F (120°C). Spread the caramel-coated popcorn onto a baking sheet lined with parchment paper or a silicone mat. Bake for about 45 minutes, stirring every 15 minutes to ensure even coating.
Add peanuts: During the last 10 minutes of baking, sprinkle the roasted peanuts over the caramel corn. Stir them in to combine, allowing the peanuts to get a little toasted and coated with caramel.
Cool and serve: Once the caramel corn is golden and crispy, remove it from the oven and let it cool completely on the baking sheet. Once cooled, break it into pieces and enjoy!
