1 cup diced tomatoes (canned or fresh)

½ cup chicken broth

Salt and pepper to taste

½ cup shredded cheddar cheese

1 tablespoon chopped fresh parsley (optional)

Cooked rice, pasta, or warm bread for serving

Directions:

Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until soft and translucent (about 4–5 minutes).

Stir in the minced garlic and cook for 30 seconds until fragrant.

Add the ground chicken, breaking it up with a spoon, and cook until browned and fully cooked.

Sprinkle in smoked paprika, cumin, salt, and pepper. Stir to evenly coat the meat.
