Ingredients
(For a simple Plantago Healing Pesto)

1 cup fresh Plantago major leaves (young and tender preferred)

½ cup fresh parsley or basil (for flavor balance)

1 small clove garlic

2 tbsp lemon juice

⅓ cup extra virgin olive oil

2 tbsp sunflower seeds or pine nuts

Salt and pepper to taste

Optional: 1 tsp nutritional yeast or grated hard cheese

Instructions
Harvest and Prepare: Rinse the Plantago leaves thoroughly. Remove any tough stems or damaged spots.

Blend: In a food processor, combine the Plantago leaves, parsley/basil, garlic, lemon juice, and nuts/seeds. Pulse until coarsely chopped.
