Instructions:
1. Preheat your oven to 375°F (190°C). Grease a 9-inch pie dish with cooking spray or butter.

2. In a large skillet, cook the ground sausage over medium heat until browned and cooked through. Remove the cooked sausage from the skillet and set it aside.

3. In the same skillet, add the diced onion, bell pepper, and minced garlic. Sauté until the vegetables are softened and fragrant, about 5-7 minutes.

4. In a mixing bowl, whisk together the eggs, milk, all-purpose flour, baking powder, salt, black pepper, dried thyme, and dried oregano until well combined.

5. Spread half of the cooked sausage evenly in the greased pie dish. Top it with half of the sautéed vegetables, followed by half of the shredded Monterey Jack and cheddar cheeses.

6. Repeat the layers with the remaining sausage, vegetables, and cheeses.

7. Pour the egg mixture over the layered sausage, vegetables, and cheese in the pie dish, ensuring that it is evenly distributed.

8. Place the pie dish in the preheated oven and bake for 30-35 minutes, or until the top is golden brown and the center is set.

9. Once the Monterey sausage pie is baked, remove it from the oven and let it cool for a few minutes before slicing.

10. Serve the pie warm as a main course or as a delicious brunch option. It pairs well with a fresh green salad or steamed vegetables.

11. Store any leftovers in the refrigerator for up to 3 days. Reheat individual slices in the microwave or in a preheated oven.
