Thinly sliced yellow onions, 3 pounds
2. Melted unsalted butter, 2 teaspoons
oil from olives, 2 teaspoons
Balsamic vinegar, 1/4 cup
two thyme sprigs that are fresh
Beef stock, 8 cups
Grated Gruyere cheese, measuring 1.5 cups
To taste, season with salt and pepper.
Substitute 1/3 cup of brandy if desired.
