Ingredients:
1 can (5 oz / 140g) tuna in water, drained
½ cup shredded cheddar cheese
¼ cup mayonnaise or plain Greek yogurt
½ small red bell pepper, finely diced
¼ cup sweet corn (canned or fresh)
2 tablespoons finely chopped red onion
1 small carrot, grated
½ teaspoon garlic powder
Salt and pepper to taste
6–8 mini flour tortillas
Olive oil or butter for toasting (optional)
Directions:
Prepare the Filling:
In a mixing bowl, combine the tuna, mayonnaise (or yogurt), cheddar cheese, red bell pepper, corn, red onion, grated carrot, garlic powder, salt, and pepper. Mix well until evenly combined.
