1 packet taco seasoning (or homemade seasoning blend)
1 can (15 oz) black beans, drained and rinsed
1 can (10 oz) diced tomatoes with green chilies, drained
1 can (4 oz) diced green chilies (optional)
1 cup corn kernels (fresh, frozen, or canned)
10-12 corn tortillas (cut into quarters)
2 cups shredded cheddar cheese (or a mix of cheddar and Monterey Jack)
1 cup sour cream
1/2 cup salsa (optional for extra flavor)
Salt and pepper to taste

Instructions:
Preheat your oven to 350°F (175°C).
Cook the meat: In a large skillet over medium heat, brown the ground beef. Add the diced onion and cook until softened, about 5 minutes. Stir in the taco seasoning and a pinch of salt and pepper. Cook for an additional 2 minutes to allow the spices to develop.
Add beans and veggies: Stir in the black beans, diced tomatoes, green chilies, and corn. Allow the mixture to simmer for 5-7 minutes, letting the flavors meld together.
Layer the casserole: In a greased 9x13-inch baking dish, begin layering the casserole. Start by adding a few pieces of the tortilla quarters to cover the bottom of the dish.
