Step 1: Bake the Potatoes
Preheat your oven to 400°F (200°C). Wash the potatoes and pat them dry. Rub them with olive oil and sprinkle with salt and pepper. Pierce each potato several times with a fork, then place them directly on the oven rack or on a baking sheet. Bake for 45-60 minutes, or until the skin is crispy and the inside is tender when pierced with a fork.
Step 2: Prepare the Steak Bites
While the potatoes are baking, prepare the steak bites. Cut the sirloin steak into bite-sized cubes and season with salt, pepper, smoked paprika, onion powder, and red pepper flakes if using.
Step 3: Sear the Steak Bites
Heat a tablespoon of olive oil in a large skillet over medium-high heat. Once hot, add the steak bites in a single layer (work in batches if necessary to avoid overcrowding the pan). Sear the steak bites for 2-3 minutes on each side, or until browned and cooked to your desired doneness. Transfer the cooked steak bites to a plate and set aside.
Step 4: Make the Garlic Butter
In the same skillet, lower the heat to medium and add the unsalted butter and minced garlic. Cook the garlic for about 30 seconds, stirring constantly to avoid burning. Once fragrant, return the steak bites to the skillet and toss to coat them in the garlic butter. Remove from heat and set aside.
Step 5: Load the Baked Potatoes
Once the potatoes are fully baked, carefully slice them open down the center. Fluff the insides with a fork, then top each potato with butter (optional), shredded cheese, sour cream, crispy bacon, and green onions.
Step 6: Top with Steak Bites
Place a generous serving of the garlic-butter steak bites on top of each loaded baked potato. Garnish with additional parsley and a pinch of salt and pepper if desired.
