1 cup fresh or frozen blueberries
1 tablespoon lemon juice
1/4 cup granulated sugar
8 oz cream cheese, softened
1/2 cup unsalted butter, softened
4 cups powdered sugar
1 teaspoon vanilla extract
Directions
Start by making the blueberry puree. In a small saucepan, combine blueberries, lemon juice, and granulated sugar. Cook over medium heat, stirring occasionally, until the mixture begins to thicken and the blueberries break down, about 10 minutes.
Once thickened, remove the saucepan from heat and let the mixture cool to room temperature.
In a large mixing bowl, beat the softened cream cheese and butter together until smooth and creamy.
Gradually add the powdered sugar, one cup at a time, beating well after each addition until fully incorporated.
Stir in the vanilla extract.
Add the cooled blueberry puree to the frosting mixture and beat until combined and smooth. If the frosting is too thick, you can add a small splash of milk to reach your desired consistency.
Variations & Tips
For a more intense blueberry flavor, you can increase the amount of blueberry puree to 1 1/2 cups. If you prefer a smoother frosting with no berry bits, strain the blueberry mixture through a fine-mesh sieve before adding it to the frosting. You can also experiment with different berries like raspberries or blackberries for a fun twist. And if you’re looking for a reduced-sugar version, try using a natural sweetener like honey or maple syrup in place of the granulated sugar.
