Ingredients:
1 ripe banana (mashed, for natural sweetness)
1 cup unsweetened applesauce
1/4 cup unsweetened almond milk (or any plant-based milk)
1 teaspoon vanilla extract
1 cup rolled oats
1/2 cup unsweetened cocoa powder
1/4 teaspoon baking soda
Pinch of salt
Optional: 1/4 cup chopped nuts (almonds, walnuts, etc.) or dried fruit (raisins, cranberries)
Instructions:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
In a large mixing bowl, combine the mashed banana, applesauce, almond milk, and vanilla extract. Stir until smooth and well combined.
In a separate bowl, mix together the oats, cocoa powder, baking soda, and salt.
Gradually add the dry ingredients to the wet mixture, stirring until fully combined. If you'd like, fold in the chopped nuts or dried fruit for added texture and flavor.
Scoop tablespoon-sized portions of the mixture onto the prepared baking sheet, spacing them about 2 inches apart. Gently flatten each scoop with the back of a spoon.
