Instructions:
1. Preheat your oven to 300°F (150°C).
2. In a large, oven-safe pot, heat the olive oil over medium-high heat. Sear the beef chuck roast on all sides until browned.
3. Set the roast aside. In the same pot, sauté the chopped onion and minced garlic until aromatic.
4. Add the beef broth and water, scraping the pot to release all the flavorful bits stuck to the bottom.
5. Place the roast back into the pot. Add the carrot chunks, potato chunks, rosemary, and thyme.
6. Cover the pot and transfer it to the oven. Cook for 3-4 hours, or until the beef is tender and falling apart.
7. Before serving, season with salt and pepper to taste.
Notes:
– For even more flavor, marinate the roast with your favorite spices overnight.
