Ingredients:
For the Soup:
1 lb (450g) ground beef (or turkey for a leaner version)
1 medium onion, diced
3 garlic cloves, minced
1 (28 oz) can crushed tomatoes
4 cups beef or chicken broth
2 teaspoons Italian seasoning
1 teaspoon dried basil
1 teaspoon salt
½ teaspoon black pepper
8 oz lasagna noodles, broken into smaller pieces
2 tablespoons tomato paste
1 tablespoon olive oil
For the Cheese Mixture:
1 cup ricotta cheese
1 cup shredded mozzarella cheese
¼ cup grated Parmesan cheese
1 egg (optional, for extra creaminess)
Instructions:
Prepare the Soup Base:
Heat olive oil in a large pot or Dutch oven over medium heat. Add the ground beef and cook, breaking it apart with a wooden spoon, until browned (about 5-7 minutes). Drain any excess fat.
Add the diced onion and minced garlic to the pot and sauté for 2-3 minutes, until softened and fragrant.
Stir in the tomato paste, crushed tomatoes, beef broth, Italian seasoning, basil, salt, and pepper. Bring the mixture to a boil, then reduce the heat and simmer for about 20 minutes to let the flavors meld together.
Cook the Pasta:
