Ingredients
2 cups all-purpose flour

1 teaspoon baking soda

½ teaspoon salt

½ teaspoon ground cinnamon (optional)

½ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 cup crushed pineapple, drained well

½ cup plain Greek yogurt or sour cream

½ cup chopped walnuts or pecans (optional)

Instructions
Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.

In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon. Set aside.

In a large bowl, beat the softened butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

Mix in the crushed pineapple and Greek yogurt until combined.

Gradually add the dry ingredients to the wet mixture, folding gently until just combined. Avoid overmixing to keep the bread tender.

Fold in the nuts if using.

Pour the batter into the prepared loaf pan and smooth the top.

Bake for 55–60 minutes or until a toothpick inserted into the center comes out clean.

Let the bread cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.
