1 sheet of puff pastry, thawed (store-bought or homemade)
1 egg, beaten (for egg wash)
1 tbsp all-purpose flour (for dusting)

½ cup cooked spinach, squeezed dry
¼ cup crumbled feta cheese
1 tbsp cream cheese
Caramelized Onion & Gruyère:
½ cup caramelized onions
¼ cup shredded Gruyère cheese

3 cherry tomatoes, sliced
2 tbsp basil pesto

Instructions:
Preheat & Prepare:
Preheat oven to 400°F (200°C). Line a baking tray with parchment paper. Lightly flour your surface and roll out the puff pastry into a rectangle about ¼-inch thick.
Cut and Fill:
Cut pastry into 2-inch squares using a knife or pizza cutter. Place a small amount of filling in the center of each square (about 1 tsp).
Seal & Shape:
Fold each square into a triangle or rectangle. Use a fork to press and seal the edges. If making open-face bites, leave them uncovered and just spoon the filling in the center.
Egg Wash:
