Ingredients:
2 cups of your favorite protein (ground beef, chicken, or tofu)
1 cup diced onions
1 cup chopped bell peppers (any color)
2 cloves garlic, minced
1 can (15 oz) diced tomatoes
1 cup shredded cheese (cheddar or mozzarella)
2 teaspoons of ground cumin
1 teaspoon chili powder
1 teaspoon smoked paprika
Salt and pepper to taste
1 pack of tortillas (6-8, depending on size)
1/4 cup sour cream (optional for serving)
Fresh cilantro, chopped (optional for garnish)
Instructions:
Cook the Protein: Start by heating a skillet over medium heat. Add your choice of protein (ground beef, chicken, or tofu) and cook until browned, breaking it apart as it cooks.
Sauté Vegetables: Add the diced onions, chopped bell peppers, and minced garlic to the skillet. Sauté for 5-7 minutes until the vegetables soften.
Season the Mixture: Stir in the diced tomatoes, cumin, chili powder, smoked paprika, salt, and pepper. Let it simmer for 10-15 minutes until the flavors meld together and the sauce thickens slightly.
Assemble the Dish: Preheat your oven to 375°F (190°C). Lay out the tortillas on a clean surface. Spoon the filling mixture onto the center of each tortilla and sprinkle with shredded cheese. Roll them up tightly to create a burrito shape.
Bake: Arrange the rolled tortillas in a baking dish. Sprinkle any remaining cheese on top. Bake for 15-20 minutes, or until the tortillas are golden and crispy.
Serve and Enjoy: Serve the baked tortillas hot with a dollop of sour cream and a sprinkle of fresh cilantro.
Tips for Serving and Storing:
Serving Ideas: These baked burritos are perfect for a cozy family dinner. Pair them with a side of rice, a fresh salad, or your favorite salsa. You can also top them with guacamole or serve them alongside a bowl of beans.
Storing: Let the burritos cool completely before storing them. To keep them fresh, wrap each one in foil or parchment paper and store them in an airtight container in the fridge for up to 4 days.
Freezing: These burritos freeze wonderfully. After they’ve cooled, wrap them in plastic wrap and then foil before storing them in the freezer. They can be frozen for up to 3 months. When ready to eat, reheat in the oven at 375°F for 20 minutes or microwave for 2-3 minutes.
