Ingredients:
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 tablespoon olive oil (plus extra for cooking)
3/4 cup warm water (more if needed)
Instructions:
Prepare the dough: In a large mixing bowl, combine the flour, baking powder, and salt. Add the olive oil and warm water to the dry ingredients, and stir to form a dough. If the dough feels too dry, add a little more water, a tablespoon at a time, until it’s smooth and slightly sticky.
Knead the dough: Transfer the dough onto a lightly floured surface and knead for 3-5 minutes until the dough is smooth and elastic.
Divide and roll out: Divide the dough into 6 equal portions. Roll each portion into a ball, then flatten it with your hands or a rolling pin into a thin disc, about 1/8 inch thick.
Cook the flatbread: Heat a non-stick skillet or frying pan over medium heat. Lightly brush the surface with a little olive oil. Once the pan is hot, place one of the flattened dough discs into the pan. Cook for 1-2 minutes on each side, until golden brown spots appear and the bread puffs slightly. Repeat with the remaining dough.
Serve: Remove the flatbread from the pan and cover with a clean kitchen towel to keep warm. Serve immediately or allow it to cool and store for later.
