Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Roll out the puff pastry sheet on a lightly floured surface.
In a small bowl, mix the almond paste and granulated sugar until smooth.
Spread the almond mixture evenly over the puff pastry, leaving a small border around the edges.
Fold the pastry in half lengthwise and press the edges to seal.
In another small bowl, whisk together the beaten egg and milk to make an egg wash. Brush the top of the pastry with the egg wash.
Use a sharp knife to make several slits across the top of the pastry.
Bake for 20-25 minutes, or until the pastry is golden brown and puffed. Let cool slightly on a wire rack.
Make the Almond Glaze:
In a small bowl, whisk together the powdered sugar, milk, and almond extract until smooth.
Drizzle the glaze over the cooled pastry.
Sprinkle with sliced almonds for a crunchy finish.
Serve:
Slice the almond puff pastry into strips or squares and enjoy!
