Introduction
Store-bought seasonings are convenient, but nothing beats the fresh aroma and robust taste of homemade garlic and onion powder. Not only do you avoid preservatives and additives, but you also get to enjoy flavors that are more intense and customizable. Whether you're a home cook, a gardener with an abundance of alliums, or just someone seeking more natural pantry staples, making your own garlic and onion powders is easy, satisfying, and budget-friendly.
Ingredients
For Garlic Powder:
Fresh garlic bulbs (as many as you like)
For Onion Powder:
Yellow, white, or red onions (quantity as desired)
Note: The only ingredient you truly need is the garlic and onions themselves—no added chemicals or preservatives required.
Directions
Step 1: Peel and Slice
Peel the garlic cloves and slice them thinly.
Peel the onions and cut into thin, even slices. The thinner the slices, the faster they’ll dry.
Step 2: Dry the Slices
You can use one of the following methods:
Dehydrator: Set your dehydrator to 125°F (52°C). Dry garlic for 6–8 hours and onions for 8–10 hours until completely crisp.
Oven: Set your oven to the lowest temperature (usually 170°F or 75°C). Spread the slices in a single layer on a parchment-lined baking sheet. Prop the oven door open slightly to allow moisture to escape. Dry for 4–6 hours, flipping halfway through.
Air Drying (for very dry climates): Place slices on a clean tray or mesh and cover with a breathable cloth. Allow to air dry for several days in a well-ventilated, dry space.
Step 3: Grind into Powder
Once fully dried, grind the garlic or onion slices using:
A spice grinder
A coffee grinder (dedicated to spices)
A mortar and pestle (for a more rustic texture)
Step 4: Sift and Store
Use a fine-mesh sieve to sift out larger pieces if desired. Store the finished powder in an airtight glass jar, away from heat and moisture.
