Ingredients:
For the meatballs:
1 lb (450g) ground beef or ground turkey
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1 large egg
2 cloves garlic, minced
1 teaspoon dried Italian seasoning
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup fresh parsley, chopped
1/4 cup milk
For the stuffing:
1 cup fresh spinach, chopped
1/2 cup ricotta cheese
1/2 cup shredded mozzarella cheese
1/4 teaspoon garlic powder
1/4 teaspoon nutmeg (optional)
For the sauce (optional):
2 cups marinara sauce (store-bought or homemade)
Fresh basil leaves (for garnish)
Instructions:
Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
Prepare the stuffing: In a medium bowl, mix the chopped spinach, ricotta cheese, mozzarella cheese, garlic powder, and nutmeg. Set aside.
Make the meatball mixture: In a large bowl, combine the ground meat, breadcrumbs, Parmesan cheese, egg, minced garlic, Italian seasoning, salt, pepper, parsley, and milk. Mix well until everything is evenly incorporated.
Form the meatballs: Take a small amount of the meat mixture and flatten it into a small patty in your hand. Place a spoonful of the spinach and cheese mixture in the center and then mold the meat around the stuffing, sealing it in completely. Roll the stuffed meatball into a smooth ball and set aside. Repeat until all the meat mixture and stuffing is used up.
Bake the meatballs: Arrange the stuffed meatballs on the prepared baking sheet. Bake for 20-25 minutes, or until the meatballs are cooked through and golden brown on the outside.
Optional sauce step: In the last 5 minutes of baking, pour marinara sauce over the meatballs and return them to the oven. Let them bake in the sauce for a few extra minutes for extra flavor.
Serve: Once done, remove the meatballs from the oven and serve them hot with a sprinkle of fresh basil or extra Parmesan cheese on top. Pair with spaghetti, garlic bread, or a simple green salad for a complete meal.
