Food has a magical way of bringing joy to both the cook and the eater. Sometimes, a simple recipe can surprise you with just how delicious it turns out. This dish is one of those hidden gems — a recipe that might look ordinary at first glance, but when you take the first bite, it exceeds all expectations. So, if you're looking for a crowd-pleasing dish that's easy to make yet packed with flavor, you're in for a treat!
Ingredients:
2 cups of cooked pasta (your choice of shape)
1 tablespoon olive oil
2 cloves garlic, minced
1 cup fresh spinach, roughly chopped
1 cup cherry tomatoes, halved
1/2 cup grated Parmesan cheese
1/2 cup heavy cream
Salt and pepper to taste
1/2 teaspoon red pepper flakes (optional)
Fresh basil for garnish
Directions:
Cook the Pasta: Bring a large pot of salted water to a boil. Cook the pasta according to package directions. Drain and set aside.
Sauté the Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook for 1-2 minutes, until fragrant, being careful not to burn it.
Add the Vegetables: Stir in the chopped spinach and halved cherry tomatoes. Sauté for about 3-4 minutes, or until the spinach wilts and the tomatoes soften.
Make the Cream Sauce: Lower the heat to medium-low and pour in the heavy cream. Stir to combine, allowing it to simmer for a minute or two.
Combine Pasta and Sauce: Add the cooked pasta to the skillet. Toss everything together, ensuring the pasta is well-coated with the creamy sauce. Season with salt, pepper, and red pepper flakes (if using).
Add Cheese: Sprinkle in the grated Parmesan cheese and stir until melted and smooth.
Serve: Remove from heat, garnish with fresh basil, and serve hot.
