Ingredients
For the Date Coffee Loaf Cake:
1 ½ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
½ cup unsalted butter, softened
¾ cup brown sugar, packed
2 large eggs
1 teaspoon vanilla extract
1 cup chopped pitted dates
½ cup strong brewed coffee, cooled
½ cup buttermilk
¾ cup chopped walnuts

1 cup powdered sugar
1 tablespoon instant espresso powder
2-3 tablespoons hot water

Preheat & Prep: Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan or line it with parchment paper.
Mix Dry Ingredients: In a medium bowl, sift together the flour, baking soda, and salt. Set aside.
Cream Butter and Sugar: In a large bowl, beat the softened butter with brown sugar until creamy and fluffy (about 3-4 minutes).
Add Eggs and Vanilla: Beat in the eggs one at a time, followed by the vanilla extract.
Combine Wet Ingredients: Stir in the cooled coffee and buttermilk until well mixed.
Incorporate Dry Ingredients: Gradually fold the flour mixture into the wet ingredients until just combined. Be careful not to overmix.
