Combining the earthy goodness of artichokes with the smooth texture of white beans, this dip delivers a satisfying richness without any dairy. Whether you’re hosting a party or just craving something savory, this dip is a must-try!
Ingredients:
1 can (15 oz) of white beans (such as cannellini or great northern beans), drained and rinsed
1 cup of artichoke hearts (canned or frozen, thawed)
2 cloves garlic, minced
1 tablespoon lemon juice
1/4 cup tahini
1/4 cup nutritional yeast (for a cheesy flavor)
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon dried oregano
1/2 teaspoon onion powder
1/4 cup water (more if needed for consistency)
1 tablespoon olive oil (optional, for added richness)
Instructions:
Prepare the ingredients: If you’re using frozen artichoke hearts, make sure to thaw them completely. For canned artichokes, drain and rinse well. Drain and rinse the white beans as well.
Blend the base: In a food processor or blender, combine the white beans, artichoke hearts, garlic, lemon juice, tahini, nutritional yeast, salt, pepper, oregano, and onion powder. Pulse a few times to break down the larger ingredients.
Adjust consistency: With the food processor running, slowly add in water, one tablespoon at a time, until the mixture reaches a creamy, smooth consistency. Add more water if necessary to get the dip to your desired texture.
Finish and serve: Taste the dip and adjust seasonings if needed. For extra creaminess, you can blend in a tablespoon of olive oil. Transfer to a bowl and serve immediately with veggies, crackers, or chips. If you prefer a warm dip, transfer it to an oven-safe dish and bake at 350°F (175°C) for about 10 minutes, until heated through.
Tips for Serving and Storing:
Serving Suggestions: Pair this dip with fresh vegetable sticks (like cucumber, carrot, and bell pepper), pita chips, or crusty bread. It’s also a great topping for baked potatoes or as a sandwich spread.
Storing: Store any leftover dip in an airtight container in the fridge for up to 3 days. The dip may thicken in the fridge, so simply stir in a bit of water to loosen it up when you're ready to serve again.
Make-Ahead: You can prepare the dip a day in advance to allow the flavors to meld. Just make sure to cover and refrigerate it until ready to serve.
