2 boneless, skinless chicken breasts, diced
1 cup long-grain rice (or jasmine rice)
2 bell peppers (red and yellow), sliced
1 small onion, chopped

1 ½ cups chicken broth
1 cup heavy cream (or half-and-half)
2 tablespoons olive oil
1 teaspoon paprika
½ teaspoon ground cumin
Salt and pepper to taste

Instructions:

Cook the chicken: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Season the diced chicken with salt, pepper, paprika, and cumin. Add the chicken to the skillet and cook until browned and cooked through, about 7-8 minutes. Remove the chicken from the skillet and set aside.

Sauté the vegetables: In the same skillet, add the remaining olive oil. Add the chopped onion and minced garlic, cooking for about 2-3 minutes, until softened and fragrant. Add the sliced bell peppers and cook for another 3-4 minutes until they begin to soften.

Simmer the rice: Bring the mixture to a boil, then reduce the heat to low. Cover the skillet and let the rice cook for about 15-20 minutes, or until the rice is tender and the liquid is absorbed.

Combine chicken and rice: Once the rice is cooked, add the cooked chicken back into the skillet, stirring to combine. If the mixture is too thick, you can add a splash more chicken broth or cream to achieve your desired consistency.
