Ingredients:
4 boneless, skinless chicken breasts
4 oz (about 115g) brie cheese, sliced
½ cup dried cranberries (or cranberry sauce for a softer texture)
2 tablespoons fresh chopped rosemary or thyme (optional)
Salt and pepper to taste
1 tablespoon olive oil
Toothpicks or kitchen twine for securing the chicken
Optional: 1 tablespoon balsamic glaze for serving
Directions:
Preheat your oven to 375°F (190°C). Lightly grease a baking dish.
Prepare the chicken by making a deep pocket in each breast. Use a sharp knife to slice horizontally through the thickest part, being careful not to cut all the way through.
Stuff each breast with slices of brie and a spoonful of dried cranberries. If desired, sprinkle in some chopped rosemary or thyme for extra aroma.
