Prepare Your Oven: Preheat the oven to 180°C (350°F) to ensure even cooking throughout.
Layer the Ingredients in Jars: Using oven-safe jars, start by layering onion rings at the bottom. This not only adds flavor but prevents the rice from sticking. Next, add a layer of rice, followed by red pepper rings for color and crunch.
Season the Chicken: Season the chicken thighs generously with salt, pepper, garlic powder, and paprika. These spices will infuse the dish with a robust flavor. Place four thighs in each jar.
Add the Broth: Pour 100 ml of chicken broth and 166 ml of vegetable broth into each jar. This combination of broths adds depth to the flavor while ensuring the rice cooks perfectly.
Bake the Pilaf: Cover the jars with aluminum foil to lock in moisture, then place them in the preheated oven. Bake for approximately one hour, or until the chicken is fully cooked, and the rice is tender.
Serve: Once ready, serve the pilaf hot, straight from the jar. This method retains the heat and makes for a unique presentation. Pair the pilaf with a fresh tomato and onion salad or a side of grilled vegetables for a complete meal.
