With simple ingredients and a few straightforward steps, Chicken and Potato Delight is sure to become a family favorite.

Ingredients:
4 boneless, skinless chicken breasts (or thighs, if preferred)
4 medium-sized potatoes, peeled and cubed
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried thyme
1 teaspoon paprika
Salt and pepper, to taste
1/2 cup chicken broth
1 tablespoon butter (optional)
Fresh parsley, chopped (for garnish)
Instructions:
Prepare the Potatoes: Preheat your oven to 400°F (200°C). Wash, peel, and cube the potatoes into bite-sized pieces. Place them in a large mixing bowl.

Season the Potatoes: Drizzle olive oil over the potatoes and sprinkle with garlic powder, onion powder, thyme, paprika, salt, and pepper. Toss the potatoes to ensure they are evenly coated with the seasonings.

Cook the Chicken: In a separate bowl, season the chicken breasts with salt, pepper, and a little extra paprika. Heat a large skillet over medium heat and add a splash of olive oil. Cook the chicken breasts for 4-5 minutes on each side until golden brown. They don’t need to be fully cooked yet, as they will finish in the oven.

Combine and Bake: In a baking dish, arrange the seasoned potatoes in a single layer. Place the browned chicken breasts on top. Pour the chicken broth over the potatoes and chicken, ensuring everything is moistened. Cover the dish with aluminum foil and bake for 25-30 minutes.

Crisp It Up: After 25-30 minutes, remove the foil and return the dish to the oven for an additional 10 minutes to allow the chicken to finish cooking and the potatoes to crisp up.

Finish and Serve: Once the chicken is fully cooked (internal temperature should be 165°F or 74°C), remove the dish from the oven. Optionally, melt a tablespoon of butter over the potatoes for extra richness. Garnish with freshly chopped parsley before serving.
