Ingredients:
1 sheet of puff pastry (store-bought or homemade)

1 cup shredded mozzarella cheese
½ cup shredded cheddar cheese
1 small onion, finely chopped
2 cloves garlic, minced
1 tbsp olive oil
1 tsp dried oregano
1 tsp paprika
Salt and pepper to taste
1 egg (for egg wash)

Prepare the Sausage Filling: In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing for 2-3 minutes until softened and fragrant. Add the sausage to the pan and cook until browned, breaking it up into small pieces as it cooks. Once browned, drain excess fat if necessary. Season with oregano, paprika, salt, and pepper. Remove from heat and set aside to cool slightly.
Assemble the Puff Pastry Rolls: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. Roll out the puff pastry sheet on a lightly floured surface. Evenly spread the cooled sausage mixture along one side of the pastry, leaving about an inch on the edges. Sprinkle the mozzarella and cheddar cheeses over the sausage mixture.
Roll and Cut: Carefully roll the pastry from the filled edge, making a tight cylinder. Once rolled, cut the roll into 1-inch slices using a sharp knife.
