Ingredients:
2 cups of finely shredded cabbage
2 large eggs
½ cup of flour (use chickpea flour for a gluten-free version)
1 tablespoon of cornstarch
1 small onion, finely chopped
2 cloves of garlic, minced
1 teaspoon of cumin powder
½ teaspoon of paprika
Salt and pepper to taste
2 tablespoons of chopped fresh parsley (optional)
2 tablespoons of olive oil (for spraying the air fryer basket)
Instructions:
Prepare the Cabbage: In a large bowl, place the shredded cabbage and sprinkle with a pinch of salt. Toss to combine and let it sit for 5-10 minutes. This will draw out excess moisture from the cabbage. After that, gently squeeze the cabbage to remove any excess liquid.
Mix the Fritter Batter: To the cabbage, add the eggs, flour, cornstarch, chopped onion, garlic, cumin, paprika, and fresh parsley (if using). Stir until well combined. The mixture should hold together but not be too runny. If the mixture feels too wet, add a little more flour until it reaches the right consistency.
Shape the Fritters: Using your hands or a spoon, form the mixture into small, round fritters. Aim for about 1-2 tablespoons of mixture per fritter.
Air Fry the Fritters: Preheat your air fryer to 375°F (190°C) for 5 minutes. Lightly spray the air fryer basket with olive oil. Place the fritters in a single layer in the basket, ensuring they don’t touch. Air fry for 10-12 minutes, flipping them halfway through for even crisping.
