Ingredients:
For the Cajun Steak Bites:
1.5 lbs sirloin or ribeye steak, cut into bite-sized cubes
2 tbsp Cajun seasoning
2 tbsp olive oil or melted butter
2 cloves garlic, minced
Salt and black pepper, to taste
For the Cheesy Mashed Potatoes:
4 large russet potatoes, peeled and chopped
4 tbsp unsalted butter
½ cup whole milk (or heavy cream for extra richness)
1 cup shredded sharp cheddar cheese
Salt and pepper, to taste
For the Rich Parmesan Sauce:
2 tbsp butter
2 tbsp all-purpose flour
1 ½ cups whole milk
½ cup freshly grated Parmesan cheese
Pinch of nutmeg (optional)
Salt and white pepper, to taste
Directions:
1. Prepare the Mashed Potatoes:
Boil the potatoes in salted water until fork-tender (about 15-20 minutes).
Drain and mash with butter, milk, and shredded cheddar. Season with salt and pepper. Keep warm.
2. Cook the Cajun Steak Bites:
Toss steak cubes with Cajun seasoning, salt, and pepper.
Heat olive oil in a skillet over high heat. Add steak bites and sear for 2-3 minutes per side, until browned and cooked to your preferred doneness. Add garlic in the last 30 seconds for extra flavor.
3. Make the Parmesan Sauce:
In a small saucepan, melt butter over medium heat. Stir in flour and whisk for 1-2 minutes to form a roux.
Slowly pour in milk, whisking constantly to avoid lumps.
Once thickened, stir in Parmesan cheese and season with salt, white pepper, and nutmeg. Keep warm.
4. Assemble:
Spoon cheesy mashed potatoes onto plates, top with sizzling Cajun steak bites, and drizzle with rich Parmesan sauce. Garnish with chopped parsley or chives if desired.
Serving and Storage Tips:
Serve immediately for the best texture and flavor. The steak should be hot and juicy, and the potatoes creamy and warm.
Leftovers can be stored in separate airtight containers for up to 3 days in the fridge. Reheat gently on the stove or in the microwave, adding a splash of milk to the potatoes to bring them back to life.
