Light, refreshing, and bursting with fruity goodness, this dessert is the perfect way to end a meal or brighten up an afternoon. Whether you're planning a garden picnic or just treating yourself, this strawberry jelly recipe is both easy to make and beautifully satisfying.

Ingredients
2 cups fresh strawberries (washed, hulled, and halved)

1/2 cup granulated sugar (adjust to taste)

1 tablespoon lemon juice

2 teaspoons powdered gelatin (or 2 gelatin sheets)

1/4 cup cold water (for blooming the gelatin)

1 1/4 cups water (for the jelly base)

Directions
Prepare the gelatin: In a small bowl, sprinkle the gelatin over 1/4 cup of cold water. Let it sit for about 5–10 minutes until it blooms (softens and swells).

Cook the strawberries: In a saucepan, combine the strawberries, sugar, lemon juice, and 1 1/4 cups of water. Bring to a gentle boil, then reduce the heat and simmer for 10–15 minutes until the berries are soft and releasing their juices.

Strain the mixture: Using a fine mesh sieve or cheesecloth, strain the mixture into a bowl. Press gently to extract all the flavorful liquid while leaving seeds and pulp behind.

Add gelatin: While the liquid is still warm, stir in the bloomed gelatin until fully dissolved.

Pour and set: Pour the mixture into serving glasses, molds, or a shallow dish. Let it cool to room temperature, then refrigerate for at least 4 hours (or until set).

Serving and Storage Tips
Serve chilled with a dollop of whipped cream, a few fresh mint leaves, or sliced strawberries for garnish.

Store in the fridge, covered, for up to 5 days.

For a more festive presentation, use silicone molds or mini glass jars.
