Ingredients:
3 ripe bananas (the more speckled, the better)
2 eggs
1 teaspoon vanilla extract
1/4 cup honey or maple syrup
1 1/2 cups rolled oats
1 teaspoon cinnamon
1/2 teaspoon baking powder
A pinch of salt
Optional add-ins: chocolate chips, chopped nuts, or dried fruit
Directions:
Preheat your oven to 350°F (175°C). Line a muffin tin or baking tray with liners or lightly grease it.
Mash the bananas in a large bowl until smooth. Add eggs, vanilla, and honey/maple syrup. Mix until well combined.
In a separate bowl, mix the oats, cinnamon, baking powder, and salt.
